Can simplify the ingredients somewhat, as his recipes always seem to me that he has a sous-chef standing by! His restaurant was one of my absolute favorites, though, so I love his recipes. Be sure to mash some up to get the creamy consistency. Subs: bacon for ham hock (or even liquid smoke - yikes - did it once in a pinch) have used less garlic, and just throw it in the food processor one bell pepper, pick a color if I don't have red wine in the house (!), I just use the red wine vinegar - adjust sugar to taste
